Why I love Minnesota!

Something Tom and I have said from the very first week we moved here, is the people here are so friendly! We love it. Everyone is very neighborly. They just seeem to care for eachother, whether they know each other or not. Just to prove my point, this morning, all before 8:00 I personally recieved 2 acts of kindness from strangers.
Every morning I bundle up the boys, so we can take Seth to the school bus. It is 1/4 mile walk and we are usually gone for 10 minutes. The boys get their hats, gloves, snow boots and snow pants on. After all of this dressing, I grab a jacket and we make a mad rush in the stroller to the bus. Today, when I got to the bus stop, and made sure that the boys were all warm enough for the wait, I realized my ears were burning. I pulled my hands out of my sleaves and warmed them up. Just as I did this, a man stopped his car in the middle of the intersection and asked me if I wanted his hat. I had never met or seen this man, and he really only had about five seconds, to decided to be so sweet and kind! How thoughtful! I declined and prayed that I would be able to show that kind of compassion to someone soon, and not easily forget his. Then just seconds later, the other family who meets at the bus stop asked if Seth could sit in the car with them to keep warm and wait for the bus, and we could just head home. Again, very thoughtful and very helpful. I ran home and on the way thought how much I love the people of Minnesota!
Just for reference, I jumped on the internet to check the temperature it is negative 16 before the windchill is factured in, and you can get a brain freeze from cold weather, not just ice cream!

That's awesome--I love nice people! And I can't believe it's that cold! Sheesh.

Ok, here is one delectable and super easy recipe, if you like fudge. I really don't care for fudge except this kind because it is so smooth and creamy and tasty!

1/4 c butter
1/4 c margarine
3 cups milk chocolate chips (1 1/2 bags)
1 can condensed milk

Put all of these in a microwavable dish--I know it's weird that they ask for butter and margarine, but supposedly it makes the fudge perfect. Microwave for 5 minutes on medium power, stopping 2 or 3 times to stir. As you stir it gets creamier--especially the last time, stir it until it's smooth and all mixed together. Then pour it into a 8x8 pan or something similar and chill for an hour. Then enjoy it and see if it lasts longer than a day or two.

Here's another one, Lazy Peach Cobbler:
1 yellow cake mix
1 (30 oz) can of peaches
1 stick margarine

You could probably go a little less on the margarine if you want to. Preheat the oven to 350 and put the margarine in the glass pan in the oven while it preheats. Don't let the margarine burn--if you want to go even faster, melt the marg. in the microwave then pour into the pan. (sometimes I've got the batter ready and I'm waiting for the marg. to melt) Drain the peach juice into a mixing bowl and add the cake mix powder. Mix it up, voila--that's your batter. Pour the batter into the pan with the margarine--the margarine doesn't have to mix up with the batter. Plop your peaches on the top and put it in the oven for 30 or so minutes. It's a very yummy, very rich dessert, so you might want some ice cream or milk to help wash it down.

Those are the only two easy and delicious recipes off the top of my head, but if you want some more, let me know.

Hi Erika! I was so excited to hear from you on my blog. I know what you mean when you are talking cold...Matt and the kids and I were in North Dakota where Matt was working and the temperature was -25 before the windchill..-53 with the chill. Yikes! I totally feel for you. Looks likwe you and your beautiful family is doimg great. Ihopr to keep tabs now and then.
